Several years ago we realized that in order to make a significant amount of really good dry Rosé in the Southern French style, we would need to plant and grow for rosé. We selected classic rosé varieties like Grenache, and planted them on their own roots in cooler sites, to encourage more vigor, later ripening, and naturally higher acidity.
This is the canned version of our popular Rose' of GSM, sold in 4 packs of 250mL each. It's dangerously convienent and delicious just about anywhere.
The Chelsea Rose may be a test in determining how much fun a professional winemaking operation is allowed to have with a wine and still be able to sell it. Making this wine has been challenging, liberating, and entirely enjoyable.
This wine is based on a recipe that we have made for friends and family in years past. We fortified a sweet rose' of Tempranillo early in fermentation, aged it for 9 months to allow for the spirits to marry, and then lightly infused it with holiday spices, including orange peel, cinnamon, and clove. It's excellent served warm, and will be a popular part of any holiday gathering.
