More of an "ice box" wine than an ice wine, technically, we picked our fruit as late as we dared, and then froze the grapes in our large reefer container before pressing. Since water freezes at a higher temperature than sugar, we were able to separate out the higher sugar juice and slowly ferment it to create a naturally sweet wine without adding alcohol to stop the fermentation. We gave this wine an extra year in the bottle before release.
Inspired by the great sweet Rieslings of Germany and Austria, this is a decadent, delicious wine that gives texture and layers of fruit with refreshing acidity.
